How to make Banana Cue

1

Heat the oil

Heat oil in a deep pan to 165°C (330°F).

2

Fry the bananas

Add bananas and fry for 3 minutes, turning gently.

3

Add sugar

Sprinkle brown sugar evenly into the oil. Allow it to melt around the bananas without stirring vigorously.

4

Coat

Turn the bananas until completely coated with glossy caramel, about 4–5 minutes.

5

Skewer and cool

Remove carefully, place two bananas on each skewer, and cool on a lightly greased rack.

Maria’s tip: Firm saba bananas are easier to coat and will not break during frying.
Food safety: Melted sugar can cause severe burns; handle the bananas with long tongs and cool before serving.
