How to cook Ginataang Langka

1

Brown the pork

Heat oil in a pot and cook the pork until lightly browned and some fat is released.

2

Add the aromatics

Add onion, garlic, and ginger. Cook until softened and fragrant, then stir in the fish sauce.

3

Simmer the pork

Add the coconut milk and green chilies. Cover and simmer gently for 15 minutes.

4

Add the jackfruit

Stir in the young jackfruit. Cover and cook for 15–20 minutes, until tender and flavorful.

5

Make it creamy

Add the coconut cream and red chilies. Simmer uncovered until the sauce thickens slightly.

6

Finish and serve

Fold in the greens and cook for 2 minutes. Season to taste.

Maria’s tip: Rinse canned jackfruit well before cooking to remove excess brine and help it absorb the coconut sauce.
Food safety: Cook pork thoroughly, keep raw meat separate from vegetables, and refrigerate leftovers promptly.
