How to cook Ginisang Munggo

1

Cook the mung beans

Combine mung beans and water in a pot. Simmer for 35–45 minutes, until tender and beginning to break down.

2

Brown the pork

In a separate pan, heat the oil and cook the pork until lightly browned and cooked through.

3

Build the flavor base

Add onion and garlic to the pork. Cook until fragrant, then add the tomatoes and cook until soft.

4

Combine and simmer

Add the pork mixture and fish sauce to the mung beans. Simmer for 10 minutes, adding water if needed.

5

Add the greens

Stir in the malunggay or spinach and cook for 2 minutes. Season with salt and pepper.

6

Garnish and serve

Spoon into bowls, add chicharon just before serving,.

Maria’s tip: Add the chicharon at the table so it stays crisp and provides a delicious contrast to the creamy mung beans.
Food safety: Cook pork thoroughly and refrigerate the munggo promptly after serving.
