Fresh Prawn Spring Rolls

How to make Gỏi Cuốn

Prepare the fillings

Cook and cool the vermicelli. Wash and dry the lettuce and herbs. Arrange all fillings within easy reach.

Soften the wrapper

Dip one rice-paper wrapper in room-temperature water for a few seconds, then place it on a damp board. It will continue softening as you fill it.

Layer the filling

Place prawns, lettuce, noodles, herbs, and one chive across the lower third of the wrapper, leaving space at both sides.

Roll firmly

Fold the bottom over the filling, fold in the sides, and roll tightly without tearing the wrapper. Repeat with the remaining ingredients.

Mix and serve

Stir together the hoisin sauce, peanut butter, warm water, and lime juice. Top with peanuts and chili, then serve immediately.

Maria’s tip: Do not soak the rice paper too long. A quick dip prevents sticky or torn rolls.
