How to cook Grilled Squid

1

Prepare the squid

Pat the cleaned squid dry. Score the bodies in shallow diagonal lines without cutting through.

2

Make the glaze

Stir together soy sauce, calamansi juice, sugar, oil, garlic, and pepper.

3

Marinate briefly

Coat the squid with half the glaze and refrigerate for 15 minutes. Reserve the rest for grilling.

4

Grill

Heat the grill to high. Grill for 3–4 minutes per side, brushing with reserved glaze, until lightly charred and opaque.

5

Plate

Rest for 2 minutes, then arrange on a rectangular platter with calamansi wedges.

Maria’s tip: Keep the marinade short and the grill hot so the squid stays tender.
Food safety: Cook seafood until opaque and firm; discard any marinade that touched raw squid.
