Clean the bones
Boil the pork bones for 8–10 minutes, then drain and rinse them thoroughly.

Simmer the broth
Add fresh water, bones, onion, daikon, and pork tenderloin. Simmer gently and skim the surface. Remove the tenderloin when cooked and slice it thinly.

Season and cook the toppings
After about 2 hours, strain and season the broth with fish sauce, sugar, and salt. Poach the prawns in the broth until pink and opaque.

Prepare the noodles
Cook the noodles according to the package directions, rinse briefly, drain, and divide among warmed bowls.

Assemble
Add pork, prawns, quail eggs, and fish cake. Ladle over hot broth and finish with scallions, chives, fried garlic, and fresh herbs.
