How to make Lumpiang Toge

1

Cook the filling

Heat 2 tablespoons oil. Sauté onion and garlic, then add carrot and green beans. Cook for 2 minutes.

2

Add the sprouts

Add mung bean sprouts, fish sauce, and pepper. Stir-fry for 2–3 minutes; keep the vegetables crisp. Drain and cool completely.

3

Wrap

Place 2–3 tablespoons filling near one wrapper edge. Fold in the sides, roll tightly, and seal with flour paste.

4

Fry

Heat oil to 175°C (350°F). Fry in batches for 3–4 minutes until evenly golden and crisp.

5

Serve

Drain on a rack and serve hot with spiced vinegar.

Maria’s tip: Cool and drain the filling well so the wrappers stay crisp.
Food safety: Keep wrappers covered to prevent drying, and never leave hot frying oil unattended.
