How to cook Pork Menudo

1

Brown the pork

Heat oil and brown the pork in batches; set aside.

2

Build the sauce

Sauté onion and garlic. Add tomato sauce, stock, soy sauce, bay leaves, and pork.

3

Simmer

Cover and simmer for 30 minutes until the pork begins to tenderize.

4

Add vegetables

Add potatoes and carrots and cook for 12–15 minutes.

5

Finish with liver

Add liver, bell pepper, peas, and raisins. Simmer 6–8 minutes and season to taste.

6

Plate and serve

Spoon the menudo into a floral bowl.

Maria’s tip: Prepare all ingredients before cooking so the dish comes together smoothly and the vegetables keep their shape.
