How to cook Prawns in Garlic and Butter Sauce

1

Prepare

Trim, devein, rinse, and thoroughly pat the prawns dry. Season with salt, pepper, and paprika.

2

Toast the garlic

Melt half the butter with the oil over medium heat. Add garlic and cook until fragrant and pale golden.

3

Cook the prawns

Add prawns in one layer and cook 2–3 minutes per side until pink and opaque.

4

Finish the sauce

Lower the heat, add the remaining butter and calamansi juice, and toss until glossy.

5

Plate

Arrange on a round plate and spoon the toasted garlic butter over the prawns. Finish with parsley.

Maria’s tip: Patting the prawns dry helps them sear instead of steam.
Food safety: Cook prawns until opaque throughout, about 63°C (145°F).
